California Sushi Balls

Stuffed California Sushi Balls with avocado, cucumber, spicy crab salad & furikake seasoning

Hey friends! These stuffed California sushi balls are getting so much love on Instagram. I had to bring them to the SheWillEvolve site!

I just LOVE doing build-your-own meals with my kids. It’s a such fun way to connect in the kitchen & they are more open to trying new foods. Mom Win!!

Ingredients:

Imitation crab meat (8oz)

Diced green onions (1/4 cup)

Spicy mayo (2 tbsp)

Avocado mayo (2 tbsp)

Finely sliced cucumbers (1/4 cup)

Cooked sushi rice or jasmine (2 cups)

Furikake seasoning (2 tbsp)

Large avocado (1)

Recipe:

•Finely chop imitation crab

•Dice green onions

•Slice cucumbers

•Mix chopped imitation crab with spicy mayo, avocado mayo & green onions

•Smash your avocado in a bowl

•Lay out pieces of saran wrap

•Add rice to the middle & press down with a spoon or spatula

•In the middle of the rice, add the crab salad, cucumbers and avocado

•Then pick up edges of the saran wrap & gently create a ball

•Twist the the top of the saran wrap help form it

•Then take out the sushi ball & roll it into a plate of furikake seasoning to cover the whole ball

•Serve with a side of spicy mayo or soy sauce for dipping
