When I was trying to eat healthier in the beginning of my journey, meals like this helped me. I would eat smaller portions of the foods I loved, with a variety of things on my plate. It kept me motivated & gave me energy. The most important thing I learned that helped me to lose weight/get healthier was to simply slow down while eating. I was always a fast eater growing up. I would practically race to get seconds of my Mom’s food everyday.

After my daughter was born, I wanted to get healthier & stronger postpartum. I started a program that taught me about portions, sugar, etc. What stuck with me is that it takes 10min for your brain to register if you’re full or not. If you slow down & chew your food thoroughly you will find that you become full sooner. Sounds simple but it worked. With light exercise, eating slower & eating more veggies/protein I lost 45 pounds. I had more energy & confidence than ever. Most importantly I was healthy (mind/body/spirit). I’m back on my journey now and taking everything I’ve learned to guide me back to feeling my best. Load your bowl with ground turkey or chicken browned with taco seasoning, onions & bell peppers. The corn I sautéed with butter, chili powder & topped with cotija cheese. Paired with avocado, jasmine rice, black beans, green leaf lettuce, pico de gallo & salsa verde drizzle.
