
Meals that involve the least amount of dishes & ingredients deserve a gold medal. They make weeknight dinners so easy. As part of the #fiveingredientswithgortons campaign, we were challenged to make a 5 ingredient recipe. I’m always up for a challenge! AD. This sheet pan cheesy potatoes, crispy beer battered shrimp and garlic broccolini came out so good. I’m inspired to make more meals like this, especially with crispy shrimp. Simple & delicious!
Ingredients:
1 package of Gorton’s beer battered shrimp
1 bunch of broccolini
1 bag of baby red or yellow potatoes
1/2 cup shredded cheddar cheese
3-4 tbsp olive oil
Herbs: 2 tbsp garlic herbs & 1 tbsp chives
Recipe:
Preheat oven to 400 degrees
Boil baby red potatoes in large pot for 15-20min (until tender)
Line baking sheet with parchment paper
Place potatoes on baking sheet and gently smash down each one (I used the bottom of a cup)
Lay out broccolini and battered shrimp on baking sheet
Drizzle olive oil over potatoes, broccolini and season with garlic herbs
Place baking sheet in oven and cook for 15min
Remove broccolini, set to side and top potatoes with cheddar cheese
Place back in oven for an additional 5min
Once done, top potatoes with chives
